The “Sablés de Nançay” cookies

In 1953, a young apprentice-baker, Jacques Fleurier, made a mistake in his father's oven that was to change the history of Nançay...

How the Sablés de Nançay were born: 

In those days, nothing was thrown out. Mother kept the son's mistake in the cooler until the next morning, then baked it, adding a little of this and a little of that. Customers were allowed to taste the concoction, and the response was overwhelming: these new little cookies brought back fond  memories of everyone's grandmother, of down-home  pastry wonders. The sablé quickly became a bakery shop staple. In the same year of 1953, one of the largest  radio-astronomical telescopes in the world was built in the forest of Nançay. Visitors to the grand opening of this wonder of modern technology found themselves in the bakery shop, were seduced by the sablé, and put the little village of Nançay on the culinary map.
